The Perfect Fall Brunch Treat

When early fall hits, brunch should feel a little more special. This crisp starts with simple sliced apples, maple, and cinnamon, then gets a generous oat topping that bakes low and slow until golden. 

A quick vanilla-maple glaze goes over the top just before serving. It’s easy enough for a Saturday morning and rich enough to feel like a celebration — especially with vanilla ice cream on the side.

Pro tip: You can really use any type of apples you want or mix and match for deeper flavor. 

Apples
- 4 apples, sliced into 8–12 wedges
- ¼ cup maple syrup
- 2 tablespoons water
- Ground cinnamon, to taste

Oat crumble
- 16 oz organic rolled oats
- ⅓ cup maple syrup
- 1 tablespoon vanilla extract
- Ground cinnamon, to taste

Finishing glaze
- 1 cup powdered sugar
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
-  ¼ cup heavy cream

To serve
- Vanilla ice cream

Instructions

  1. Heat the oven to 275°F. 
    2. Add the sliced apples to an 8×8-inch glass baking dish (grease with avocado oil). Toss with maple syrup, water, and a dusting of cinnamon.
    3. In a bowl, mix the oats with maple syrup, vanilla, and cinnamon until evenly coated. Spread the oat mixture over the apples.
    4. Bake for 60–90 minutes, until the apples are tender and the topping is golden.
    5. Let the crisp cool slightly.
    6. Whisk the powdered sugar, maple syrup, vanilla, and heavy cream until it becomes a smooth glaze. Spoon it over the top.
    7. Serve warm over vanilla ice cream.
