Honey Greek Yogurt Parfait for Brunch

This elegant, make-ahead parfait layers creamy honey-sweetened Greek yogurt with crunchy oats and fresh fruit. It’s naturally sweetened, refreshing, and perfect for a brunch spread. Each serving is built in clear glasses or jars for beautiful layers, divided roughly into thirds (yogurt base, oat layer, fruit top, with optional repeats).

IngredientsYogurt Layer (sweetened base):
  • 4 cups (about 32 oz / 900–1000 g) plain Greek yogurt (full-fat or 2% for best texture)
  • 2 tablespoons to ⅓ cup all-natural honey (start with 2 tbs and adjust to taste; use more for sweeter parfaits)
  • 1 tsp vanilla extract (optional, for depth)
  • Pinch of salt
Oat Layer:
  • Use Tom's Toasted Oats for your oat layer. The balanced blend will pair well with the yogurt and fresh berries.
Fruit Layer:
  • 6–8 servings of fresh fruit (mixed berries like strawberries, blueberries, raspberries; sliced bananas, pineapple, or mango for brunch appeal)
Finishing Touches (per serving or for the table):
  • Extra honey or maple syrup for quick drizzle
  • Additional dash of cinnamon or a sprinkle of nuts
  • Fresh mint leaves (optional garnish)
Instructions
  1. Sweeten the Yogurt:
    In a medium bowl, whisk together the Greek yogurt, 2 tbs to ⅓ cup honey, vanilla (if using), and pinch of salt until smooth and creamy. Taste and add more honey if desired. Set aside. This creates the creamy base that forms about ⅓–½ of each parfait.
  2. Grab the Oats: Grab TTO or your favorite oats
  3. Prep the Fruit:
    Wash and slice larger fruits. Toss with a little lemon juice. Keep berries whole or halved for nice layers.
  4. Assemble the Parfaits (Sectioned into 3rds):
    Use 8 tall glasses, mason jars, or parfait cups (about 8–12 oz each). You can also use mini glasses if you want to keep portions small. 
    • Bottom third (~⅓ of the glass): Spoon ½ cup sweetened Greek yogurt into each glass. Smooth the top.
    • Middle third: Add a generous ¼ cup oat mixture. Gently press down for a clean layer.
    • Top third: Pile on ¾–1 cup mixed fruit.
  5. Finish:
    Drizzle each parfait lightly with honey or maple syrup. Dust with a dash of cinnamon. 
Make-Ahead & Serving Tips
  • Prep ahead: Assemble up to 4–6 hours before serving and refrigerate (oats stay crispest this way). Or prepare components separately the night before.
  • Brunch presentation: Set out on a tray with extra honey, cinnamon, and spoons. Guests can add more drizzle.
  • Customizations:
    • Swap some fruit for seasonal options (peaches, cherries, or citrus in sections).
    • Dairy-free version: use coconut or almond yogurt (still sweeten with honey).
Each serving is protein-packed from the Greek yogurt, with natural sweetness and fiber from oats and fruit. Total per parfait is roughly balanced in thirds for beautiful stripes. Enjoy your brunch!
