Vegetarian Spinach, Mushroom & Onion Quiche

Our Vegetarian Spinach, Mushroom & Onion Quiche is the ultimate make-ahead brunch centerpiece. Prep it Sunday morning (or even Saturday night), and you’ll have a warm, savory slice ready whenever you want it.
 Vegetarian Spinach, Mushroom & Onion Quiche
**Serves 6–8** | Prep: 20 min | Bake: 35–40 min
**Ingredients:**
- 1 pre-made 9-inch pie crust
- 1 tbsp olive oil or butter
- 1 medium onion, thinly sliced
- 8 oz mushrooms, sliced
- 3–4 cups fresh spinach, chopped
- 2–3 garlic cloves, minced
- 4 large eggs
- 1 cup milk or half-and-half
- 1 cup shredded cheese (cheddar, Swiss, or mix)
- Salt, pepper, nutmeg or thyme to taste
**Instructions:**
1. Preheat oven to 375°F.
2. Sauté onion until golden, add mushrooms and cook until browned. Stir in garlic and spinach until wilted. Season and let cool.
3. Whisk eggs, milk, cheese, and seasonings. Mix in veggies.
4. Pour into crust and bake 35–40 minutes until set. Cool slightly, then refrigerate.
**Sunday morning tip:** Bake it fresh while you sip coffee, or reheat slices in the oven for 10 minutes. It tastes even better the next day!
